Step 1
Take cottage cheese in a bowl, add 4 teaspoons red chili powder, black pepper according to taste, 2 teaspoons chaat masala, 2 teaspoons coriander powder, and salt to taste, and mix well.
Step 2
Heat a non-stick pan, add 1 tablespoon oil, and heat it again now add 1/2 teaspoon cumin seed, ginger-garlic paste, add onion and sauté it till brown, add tomatoes and sauté till it turns soft.
Step 3
Add 1/2 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/3 teaspoon turmeric powder, and 1 teaspoon red chili powder, salt to taste, and mix well. And now add the cottage cheese into it and mix well. Add some (4-5 teaspoons) water and mix them all together. And cook for 1 minute. Take the pan off the heat and set aside.
Step 4
Heat a non-stick tawa and put the refined flour roti or wheat flour roti on it and spread little oil on it and warm it from both sides.
Step 5
For Frankie, place the warm Roti on the plate, put some cottage cheese mixture on it, spread 1/2 teaspoon chili sauce on top, sprinkle some chaat masala, grind some processed cheese, some onion strips, some coriander leaves on it, and then roll it.
Step 6
Wrap the rolls in aluminum foil or in colorful tissue napkins and serve with tomato or chili sauce
